SUGARLESS PEANUT BUTTER FUDGE QUICK AND P-NUTTY!
SUGARLESS FUDGE This is a really tasty peanut butter fudge.
I have been looking for something that is quick and easy.
This recipe can be done in 15 minutes, and it is made from Jello Instant Pudding (Sugar-free).
I created this myself, and I made it to make sure that it tasted great.
I am not going to tell you that it is just like the real fudge,because it is not. It is a candy for people restricting their sugar intake. Like myself, I am type 2 diabetic.
I can't tell you what the sugar or fat content is, but I can give you the list of ingredients, and you can check it out for yourself. P.S.-This candy will not make your tummy hurt.
INGREDIENTS:
1/4 cup "I can't believe it's not butter"
2-1 oz. box Sugar Free Instant
..pudding (White Chocolate)
2/3 cup Splenda
3/4 cup Skippy Super Chunk
..25% reduced fat(4g sugar)
1-8 oz. Neufchatel cheese
..1/3 less fat than cream cheese (1g sugar)
1/4 cup Sugar Free International
..Vanilla Cream powder
1/2 cup peanuts (crushed)
1-tsp. vanilla
#1. Put diet butter in mixing bowl. Microwave for about 25 seconds.
Now start adding each ingredient that is on the list.
Except for the vanilla. Vanilla is added at the very last.
Now that you have all the ingredients in the bowl, get your mixer.
Begin to beat the mixture until it all of a sudden balls up on the beaters.
Don't panic! Just push the beaters against the side of the bowl and hold there until the mixture lets go.
Now this is where you add the vanilla, and the mixture will ball up on the beaters again. Just do the same thing again.
Stop the mixer and remove any extra mixture from the beaters.
With your hands, pick up the fudge. It should be like a cookie dough.
Massage it just a little bit and place in your pan (8") that has been sprayed with Pam.
Now, with your hands spread the fudge mixture out to fit the pan.
Sprinkle crushed peanuts on top now.
You are now done. Place in freezer for 1 hour. Take out and cut into squares. Place on a pretty plate and serve. Always keep the left overs in the refrigerator (not the freezer this time). This keeps the fudge nice and firm.
