PEANUT BRITTLE
SOUTHERN STYLE.


Christmas Time was when Peanut Brittle
was made in our house.
My Mom always made enough for family
and friends.

I'm sorry to say that I never got my
Moms recipe.

I had a special cookbook,
(called Cookbook Publishers)
that I got my recipe from.




Let us begin.........................

Ingredients:

3 Cups Sugar
1 Cup White Karo
1/2 Cup Water
3 Cups Raw Peanuts
1/3 Cube Butter
2 Level Tsp. Baking Soda
1 Tsp. Salt

Prepare in a 3-quart saucepan: Sugar, White
Karo, water: set aside. Measure into a small
dish the baking soda, salt and butter.

With heavy-duty aluminum foil, make a tray
about 25 inches long, turn up about 1 inch
on each side and butter the bottom of the tray.

Cook all ingredients in saucepan to a boil
that can't be stirred down; add 3 cups raw
peanuts and cook till peanuts are a golden
brown - about 10 minutes, stirring constantly.

When peanuts are golden brown, add baking
soda, salt and butter. The mixture will foam
up a little and when it gets golden brown,
pour FAST on buttered foil.

Don't touch for 30 minutes. Let cool and break into
pieces. For best results, use a wooden spoon for stirring.

You can also use almonds instead of peanuts or any
kind of nut that you like.





This is "New," and "Different."

HAZELNUT BRITTLE

2 cups sugar
3/4 cup white karo syrup
1 Tbls. butter
2 cups coarsely chopped hazelnuts*
2 tsp. baking soda
1 Tbls. vanilla

#1. Spray 2 large cookie sheet pans with Pam or use butter.
#2. In large, heavy saucepan, combine sugar, karo syrup,
3/4 cup water, butter, and nuts. Stir over medium heat, just
until sugar is dissolved.
#3. Continue cooking, without stirring, until mixture becomes
amber colored. Cook, stirring, to 290F on candy thermometer,
or until a little dropped in cold water separates into
threads, which are hard but not brittle-about 20 minutes.
#4. Remove from heat. Add soda and vanilla, stirring
slightly.
#5. Pour into prepared pans, forming large square of brittle
in each pan. Cool, then break into pieces. Makes 2-lbs.
*Any unsalted nut may be used.



To make your peanut brittle a little
bit different than most folks, here's
a little tip.

Take 2 or 3 Hershey Bars and melt them
down into a pouring liquid.

While your brittle is cooling,
drizzle chocolate over the top.
Like in the picture.
